5 minute muesli bars

I feel like life is racing by.

I’m just a regular mum. Busy working, providing, cleaning and cooking. But best of all, I am raising my two beautiful boys. The youngest is 9 months old, and is crawling and causing mischief everywhere. The other is almost 4 years old. A little book worm, with a cute bright smile that shows all his little razor sharp teeth. I love them both with all my being. How could it be that I brought these guys into this crazy world. I often sit and try and take in the whole picture of my husband playing with the kids because these are the moments that really define us and make everything we do worthwhile.

Enjoy these, they are super simple to make and take no time at all !!!

Place in a clean bowl-

2 cups of mixed muesli (any kind will do!);
1 cup of pumpkin seeds;
1 cup of sunflower seeds;
1 cup of melted and cooled coconut oil (melt on low heat in a saucepan);
half a cup of crunchy (or smooth) peanut butter;
half a cup of currants;
chocolate chips if you like to add (I left them out this time, but will add some next time) – although its great without it!

Mix everything together with a spoon or your hands (will get messy!), and then transfer onto a tray lined with baking paper. Press everything down evenly.

Place into your freezer to set for about 20-30 minutes.

Cut/ Serve/ Enjoy!!!
