I usually make this salad when we don’t have any plans for dinner and need to throw something together last minute!
It’s quick, simple and delicious and you can basically add anything you have in the fridge. Feta, sun dried tomatoes, olives, steamed veggies like broccolini and asparagus, any type of seed, pumpkin and/ or sweet potato, artichokes and so on! You can put all these scrumptious ingredients on a bed of spinach, rocket or cos lettuce!
You can add eggs, or keep it vegan and add brown rice, wild rice, black rice and my personal favourite – quinoa.
