These raspberry bites are so simple, delicious and healthy. They take hardly no time at all to prepare and make, so I hope you enjoy them as much as I do!
What you need:
1 cup of mixed nuts (you can also use just plain cashews);
1 cup of desiccated coconut;
2 tablespoons of honey (or maple syrup);
2 to 3 tablespoons of coconut oil;
1 teaspoon of vanilla extract;
100 grams of raspberries
200 grams of dark chocolate, or to make vegan chocolate you will need cocoa.
How to do it:
Put the mixed nuts & coconut in the mixer until a beautiful fine grain is formed;
Empty and put aside into a bowl;
Puree the raspberries and place into the bowl with the coconut and nuts;
Put all other ingredients into the bowl and mix well;
Form them into little bite squares and place them onto a baking tin on baking paper;
Freeze them for about 30 to 40 minutes.
Meanwhile, melt the dark chocolate or milk chocolate over boiling water in a pan and stir occasionally;
Or, to make a vegan frosting simply mix everything below in a clean bowl:
- 1 tablespoon almond spread/ butter
- 1 tablespoon honey /maple syrup
- 3 tablespoons coconut oil
- 3 tablespoons cacao or cocoa
Allow the bites to slightly cool down and take them out of the freezer;
Place them one by one into the chocolate ensuring they are all completely covered and then place back onto the tray and into the freezer for another 45 minutes.
*Makes approximately 10 medium sized raspberry chews 😉
