Healthy and simple banana muffins

I just wanted to hear your cry and for everyone to tell me that you were OK. That you had 10 beautiful fingers, and 10 beautiful toes. All I wanted was to hold you and look deeply into your eyes and for you to know that I was your mum. Yours, forever and ever. When you cry, I cry. When you’re happy, I am the happiest. You are my first born, my true love. My first little monkey – my Christos.

For the first time, I was a mum. You gave me that right, that purpose and filled my heart with love. With that love, came many tears. Some happy, some sad, some frustrating and helpless.

But all will be well.

All will be well, as long as we have each other.




(note: The recipe below is using 2 very ripe banana’s. If you are using 4 then double the ingredients, and so on!)


1 cup of flour (or almond meal)
1 1/2 teaspoons of baking soda
1/2 teaspoon of fine salt
1 cup of brown sugar
1/4 cup of beautiful olive oil
2  or 3 ripe bananas – mashed
1/4 cup of water
1 teaspoon of vanilla essence
a splash of golden surup (just to add some more rich and sweet flavour)

What to do:
Preheat oven to 160 degrees;
Throw everything together in a nice big bowl;
Mix well;
Grease muffin tray with some margarine, or butter with your fingers or paper towel;
Using a big spoon, spoon mixture to each muffin in the tin;
Bake for approx. 35 – 40 minutes on 160 degrees and then increase to 220 for another 15 minutes.
Let the muffins completely cool down, and when ready slice bananas to put on top and sprinkle with cinnamon sugar or cinnamon !!!
